FoodMate Score of the food

This is a score for the food on its own, by its composition per 100 g, using the same formula the app applies to a meal. On a plate with other foods the result will differ: buckwheat with vegetables scores higher than buckwheat alone.

How many calories are in eggplant

Fresh eggplant has 24 kcal per 100 g: 1.2 g of protein, 4.5 g of carbs and 2.5 g of fiber, with almost no fat. A medium eggplant weighs 250-350 g and gives 60-85 kcal. A one-centimeter round weighs about 25 g and is worth 6 kcal. Eggplant itself is one of the lightest vegetables, only the cooking method makes it caloric.

Why fried eggplant is so caloric

Eggplant has porous flesh, and in the pan it soaks up oil like a sponge. Fried rounds come to about 130 kcal per 100 g, and if fried in flour with more oil added, 150-180. A serving of fried eggplant with garlic and mayonnaise easily reaches 400 kcal. Salt helps: salt the rounds for 20 minutes and press them, and they absorb less oil. Even better is baking the rounds in the oven, brushed with oil.

Baked eggplant, spread and rolls

Eggplant baked whole or halved without oil comes to about 35 kcal per 100 g: it loses water. It is used for baba ganoush and eggplant spread: homemade spread with tomato and oil is about 90 kcal per 100 g, store-bought 100-150. Fried eggplant rolls with cheese and garlic are about 180-220 kcal per 100 g, a snack rather than a light vegetable.

Eggplant for weight loss

Baked or braised eggplant is a good bulky side: lots of fiber and almost no calories. Its texture works well instead of some of the meat in vegetable stews and lasagna. The main rule is the same as with zucchini: watch the oil. One tablespoon for the whole pan instead of as much as it absorbs saves 200-300 kcal.

How to count your serving

Weigh the eggplant and multiply by 0.24, counting the frying oil separately: assume what you poured in was absorbed. If the eggplant is already fried or in a stew, take a photo in MyFoodMate AI and the app estimates the oil along with the vegetables.
