Where the calories come from

The potato itself is moderately caloric, about 80 kcal per 100 g. During frying the slices lose water and absorb oil: a serving ends up with 15–20 g, which is 130–180 kcal. The thinner the slices and the more often you stir them, the more oil they take in. Thick wedges and a hot pan absorb less.

Frying with less oil
